Epilogue We end this tour of cheese making with the names of all our other substantial contributors: the licensed cheese maker Kostas Sioutas who has just completed 30 years at our dairy; Kostas Tothis who celebrates 25 years; the licensed cheese-maker Giannis Kalambokis; and Thodoros Bissas, Kostas Dassoulas and Christos Pailas who make up the rest of the cheese making team. Continuous training ensures a constant supply of new people. But training at our dairy does not only rely on theory and practice alone. We do recognise their importance, but also believe in the folk saying:
“With brains and knowledge some people find the right way...”
Last but not least, we mention the Director of the Foundation, Metsovo branch. ( Kostas Tritos is a director who pitches in, doing any job whatsoever whenever the need arises -a prime example of the theory that good management today means than just being very capable and inspirational.)
All of us owe the vision, the creation, the enthusiasm and the “rennet” of our success to ONE man.
