5,000 copies in Greek and 2,000 copies in English were printed at the PAPASTRATOS S.A. Printing Department under the direction of Aris Hatzopoulos. The Knowledge, experience and inspiration were provided by Apostolis Bissas from Metsovo, who manages the Tossizza Foundation's cheese dairy there. The material was put together by the artist, Kostas Tzimoulis, from Drossopigi of Konitsa who is an advertiser and graphic artist in Athens. The photographs were taken by Vassilis Georgiou from Epirus who has his own studio in Athens. The sketches were drawn by Vassilis Harissis, the architect and town planner from Ioannina who is notable for his exceptional sensitivity to both space and time in whatever he undertakes. The text was written by the current President of the Foundation, Tassos Averoff, who fulfilled his studies as a chemical engineer at the Metsovian Polytechnic University of Athens, but has always been involved with other occupations.
